The thousands of people who booked reservations for indoor dining at the House of Prime Rib will still have a chance to eat the restaurant's prized meat and baked potatoes — the 71-year-old restaurant has decided to continue doing takeout.
The San Francisco classic closed in March, and at the time, owner Joe Betz avoided takeout, saying it would be too difficult for the restaurant to do.
But when it reopened at 25% capacity in October — with a new, $10,000 filtration system — fans immediately snatched tables, with some 3,000 reservations through December. Betz decided to accompany it with takeout service since the kitchen was already open.
Despite Betz’s earlier reservations, takeout service has worked well enough that the restaurant will continue it even after the dining room closes on Friday. On Tuesday, Mayor London Breed announced that restaurant dining rooms need to close once again due to a rise in coronavirus cases.
“That’s an area we never thought we would be successful,” Betz said of takeout, adding that there were more than 140 takeout orders on a recent Saturday. “It was a surprise.”
The restaurant’s whole menu is available for takeout, including 21-day aged prime rib, sides such as baked potatoes and secret menu dishes like creamed corn. True to form, though, it’s largely old-school. People looking to order in bulk, like a whole or half-rack, can do so by email. Otherwise, the only way to order is by showing up at the restaurant, according to staff.
Still, the demand doesn’t compare to indoor dining, and Betz said that the closure “is devastating,” though he thinks the restaurant’s savings will help it survive. The main problem, he said, is that he now has to once again lay off employees. Before the pandemic, House of Prime rib staffed nearly 100 people. Last month, it went back to around 60, and he’s in the process of figuring out how many of them he can keep.
“Now we have to lay them off again, and just around the holidays,” he said. “If you have children at home? It’s devastating. It is truly devastating for the employees.”
